Meat & Clams portuguese style stew

Portuguese people warning: this is not the traditional recipe!!! It’s just my interpretation according to what I have in the fridge. So do not get upset!

Let’s start with the clams. What I am about to write is the most simple and tasty way to cook clams. Wash carefully removing the sand. It may be a good idea to leave them to soak in cold water for a few hours . In a frying pan you place garlic (three cloves every 2 pounds of clams) and chili. When the oil is hot, throw the clams adding plenty of chopped parsley, pepper and half a glass of white wine. Cover with lid to let the clams to open. Once opened, turn the heat off.

Now let’s introduce the meat. In a pan place garlic, smoked paprika and dried coriander. Add the meat and cook for about 10 minutes adding a bit of wine. When dry add meat broth and cook until the broth will be gone.

To this point, the only thing you have to do is adding the meat to the clams and cook for about 5 minutes.

Serve with a good white dry wine, I chose le vigne di Zamò. Enjoy
