Courgette pasta soup with poached egg

There are times in which I rush dinner for my daughter at the very last moment. This recipe can be prepared in 20 minutes having some beef stock in hand. If not, you can make a quick one using vegetables (carrot, garlic, celery).

Start by cutting there courgettes in  tiny pieces, allowing a quick cook. Put them into boiling stock, let’s say a glass and add a handful of pasta. I use the kids pasta formats, like little stars. Leave it to boil for about 15 minutes, them open an egg into it and with lid on leave it to cook for other 7 minutes. Sprinkle with Parmesan.

Kids will love to see the egg yolk coming out and will eat it, including the courgettes!!!!
